Ingredients:
Pearl Millet (Bajri)- ¼ cup soaked for 8 hours.
Quinoa- ¼ cup and Amaranth(Rajagro) ¼ cup . Both soaked for an
hour.
Green split moong or moong dal- 1 cup, Rice- 1 cup
Vegetables (finely chopped) –Onion, Tomatoes, French beans, Spinach
and Peas.
Other Ingredients:
Finely grated garlic, ginger and green chilies, whole
cloves, cinnamon stick, curry leaves, cumin seeds, asafoetida (hing) salt,
turmeric, cilantro and chopped red bell pepper for garnish, oil/ghee.
Directions:
The Khichdi proportion would be twice the water of the
grains as it should be semisolid. Heat ghee or oil for vaghar/tadka and
add cumin seeds and the other ingredients except cilantro and saute
the vegetables for 2-3 minutes. This should be added to the soaked
Khichdi grains and cooked either in pressure cooker or insta pot.
Garnish the Khichdi with cilantro, red bell peppers, ghee or olive oil and
enjoy with cooling chaas.
Note: Add the seasonings to your desired taste.This Khichdi is very
satisfying after a good juice detox.
